Low carb, low fat, high protein stew

Recipe Ingredients for Beef and Bean Stew

1 1/2 cup onion, raw
3 tsp olive oil
1/2 tsp pepper, red or cayenne
1 cup kidney beans (rinsed)
6 oz beef, eye of roast round
1/2 cup tomato puree
1 cup salsa
1 cup beef broth
1 tsp chili powder
1 tsp basil, dried
1/2 tsp curry powder
1 tsp oregano, dried powder

Recipe Directions for Beef and Bean Stew

  1. In sauce pan cook beans and onion in 2 tsps of the olive oil until tender, then add tomato puree, beef broth, spices and salsa.

  2. Continue to cook vegetable mixture under medium heat until hot.

  3. While the vegetables are cookin, in non stick pan add remaining olive oil and stir fry beef until cooked.

  4. Add beef to vegetables and simmer for 5 minutes.

  5. Please equal amounts on 2 plates and serve with a green salad.

  6. (always drain and rinse canned beans before using)
