A throw what you have in the pot recipe. Beef stock made from scratch, so sodium is possibly lower. Can be made in a slow-cooker.

Recipe Ingredients for Beef & Bean Soup

1 cup chopped cabbage
6 cups beef stock
1/4 cup chopped scallion
1 cup rice
2 cups black-eyed peas
1 cup parsley
1 cup spinach
1/2 cup carrots
1 clove garlic

Recipe Directions for Beef & Bean Soup

  1. Put beef bones/scraps in pot

  2. Add 6 cups water

  3. Simmer for 1 hour

  4. Add garlic, scallion, carrots, and black eyed peas

  5. Simmer for 30 minutes

  6. Add parsley, spinach, and rice

  7. Simmer for 30 minutes

  8. Remove beef bones/scraps.

  9. Add salt & pepper to taste.
