Beef, borlotti beans and vegetables braised in red wine. Freezes well.

Recipe Ingredients for Beef and bean Italian casserole

1 kg lean beef
375 grams dried borlotti beans
500 ml red wine
2 medium onions
4 garlic cloves
200 gram mushrooms
750 g sweet potato
250 grams parsnip
1 tbsp fresh basil
1/2 tbsp fresh rosemary
2 cups beef stock
1 tbsp olive oil
2 cups water

Recipe Directions for Beef and bean Italian casserole

  1. Soak beans covered in water overnight (in refrigerator)

  2. Drain beans and discard water

  3. Add beans to saucepan with water and beef stock

  4. Bring to low simmer and cover

  5. Cook beans for 30 minutes.

  6. meanwhile, cut beef into 2 cm cubes (remove visible fat)

  7. Cut vegetables and mushrooms into 2 cm cubes

  8. Crush garlic

  9. Brown beef batches in olive oil in flameproof casserole dish, remove and cover

  10. Cook onions and garlic in pan until soft

  11. Add beans and liquid to pan and return to simmer

  12. Add beef, wine and herbs to pan and cook covered at a low simmer for 1 hour.

  13. Add sweet potato and parsnips to pan and cook covered at a low simmer for 30 minutes.

  14. Add mushrooms and cook uncovered at low heat for 20 further minutes until all ingredients are tender.
