Beef and bean casserole - slow cooked. Use round steak or other cheaper cut of meat for best flavour

Recipe Ingredients for Beef and bean casserole

1 kg lean beef
1 large onion
1 1/2 cups celery
3 medium carrots
3 cloves garlic
400 grams red kidney beans
400 grams tinned tomatoes
2 tbsp lemon juice
1/4 cup vinegar
1 tbsp fresh rosemary
2 tsp salt
2 cups water
2 tbsp oatmeal
1 tsp olive oil

Recipe Directions for Beef and bean casserole

  1. Soak beans overnight in water (alternatively, use 800 grams tinned beans)

  2. Chop beef into cubes

  3. Preheat oven to 150C

  4. Heat oil in large flameproof dish on stove

  5. Brown beef and remove from pan

  6. Add chopped onion, celery, carrots and garlic to pan and cook 5 minutes

  7. Return beef to pan and add all remaining ingredients

  8. Bring to simmer

  9. Cover pot and cook in oven for 2 hours, stirring once during this period

  10. Serve with pasta and salad
