Recipe Ingredients for Beef: BBQ Meatloaf

1 lb. ground beef, 15% fat
1 1/4 tsp. salt
1/4 tsp. ground black pepper
1/2 c. diced onion
1/2 c. diced bell pepper or zucchini
1 egg, lightly beaten
8 oz. canned diced tomatoes with juice (can use 1 c. pasta sauce)
1/2 c. oatmeal

Topping:
1/2 c. ketchup
3 T. brown sugar
3 T. vinegar
2 T. Dijon mustard
2 T. Worcestershire sauce

Recipe Directions for Beef: BBQ Meatloaf

  1. Preheat oven to 375 degrees F. Spray a 13x9 pan generously with non-stick spray.

  2. Mix all meatloaf ingredients well and place in prepared pan. Shape into a wide loaf with a flat top (keeps the sauce from rolling off). There should be about 2-3? of space between the edge of the loaf and the sides of the pan.

  3. Mix ingredients for topping and spread of it on the loaf. Bake for 1 hour, spreading the other of the topping on the loaf about halfway through.
