Bottom round braised in casserole for 3 hours. Add veggies as side

Recipe Ingredients for Beef Base (braised)

2 tbsp olive oil
2 tbsp flour
8 oz beef, bottom round
8 oz mushrooms
1 clove garlic
1/4 c. wine, dessert
14 oz beef broth
1 tbsp tomato paste
1/2 onion

Recipe Directions for Beef Base (braised)

  1. Cut beef into 3/4" pieces

  2. Heat 1 tbsp oil in dutch oven

  3. Toss beef in flour to which 1/2 tsp salt, pepper, and 1/2 tsp thyme have been added; reserve flour

  4. Brown beef, remove from pot

  5. Wipe out pot, add 1 tbsp oil, garlic and onion, cook until soft

  6. Add mushrooms, cook 5 - 6 minutes

  7. Return beef, add broth, wine, and tomato paste

  8. Cover casserole and place in 225 oven for 2 to 3 hours

  9. Add reserved flour to small amount of broth, return to pot to thicken (if desired).
