Beef and Barley Stew Recipe

Beef stew with barley, mushrooms, carrots, peas and carrots. Adapted from another recipe because something went wonky with the barley to liquid ratio--I used Quaker Medium Barley for this. It gets thick, so if you want a thinner stew, I'd probably add some water at the very end.

Recipe Ingredients for Beef and Barley Stew

1 1/2 pounds lean beef , cut into 1/2-inch cubes
64 oz beef broth
1 cup pearl barley
1 tsp. dried thyme
1/4 tsp. dried rosemary, crushed
1/4 tsp. pepper
4 medium carrots, sliced
1/4 cup frozen peas
1/4 c frozen corn
1 c sliced mushrooms

Recipe Directions for Beef and Barley Stew

  1. Brown beef in saucepan/pot.

  2. Add 42 oz beef broth, barley, and spices.

  3. Bring to boil, simmer until broth is mostly gone.

  4. Add rest of broth and about a cup of water.

  5. Simmer for another 10 minutes.

  6. Add carrots and mushroom.

  7. Simmer for 5-10 minutes.

  8. Add peas and corn.

  9. Simmer for a few minutes, until heated through.

  10. Remove from heat.
