This is a hearty winter soup and is easy to make up variations along the way!

Recipe Ingredients for Beef Barley Soup

1 cup raw Barley, Pearl
2 stalk,+large+11"-12"+long celery stalks
425 g Pinto Beans
3 Carrots
1 Poblano Pepper
1 Leek
1 Onion
6 cups beef broth
1 pepper
360 g roast beef
1/4 head cabbage
1 cup parsley

Recipe Directions for Beef Barley Soup

  1. Cook the barley in 3 cups of water for one hour

  2. In a separate pot, sauté the onion, leeks, poblano and celery.

  3. Pour in the beef broth and let simmer for an hour.

  4. Mix in the barley and serve.

  5. A simple mixed green salad is a great on the side!
