This is a hearty soup that is great on a cold winter's day.

Recipe Ingredients for Beef and Barley Soup

2 tablespoons olive oil
2 leeks, chopped
2 clove garlic, minced
3 stalks celery, chopped
3 medium carrots, diced
6 cups low sodium beef broth
1 lb. lean beef, cubed
14 1/2 oz diced tomatoes
3/4 cup rice or barley
3 medium potatoes, peeled and cubed
1 1/2 cups frozen peas
2 teaspoons thyme
1/2 teaspoon salt or to taste
1/4 teaspoon pepper or to taste

Recipe Directions for Beef and Barley Soup

in a pressure cooker heat olive oil. Add leeks, garlic, celery and carrots. Saute for about 5 minutes or until tender. Place remaining ingredients in cooker and stir. Close the pressure cooker, place the rocker on the stem and cook on high until it starts to sizzle. Reduce heat to medium and cook for 20 minutes. Run under cold water until pressure is released and allow soup to cool a few minutes before serving.
