Beef and pork make it more interesting and lower fat. The red pepper flakes give it a little kick.

Recipe Ingredients for Beef & Barley Soup

3/4 lb ground beef
1/4 lb ground pork
5 mushrooms
1 cup pearl barley
2 stalks celery
1 small onion
1 tsp olive oil
1 tsp salt
1 tsp pepper
4 tsp beef bouillon
8 cups water
1 tsp red pepper flakes

Recipe Directions for Beef & Barley Soup

  1. Heat water and add bouillon, red pepper flakes, onions & celery. Allow this to simmer with a tight fitting lid while you cook the barley and beef.

  2. Brown the beef and pork then set aside.

  3. Prepare barley according to package directions.

  4. Add cooked barley, beef mixture and mushrooms to soup base along with salt and pepper to taste. Allow this to simmer 20 minutes uncovered.
