Recipe Ingredients for Beef and Barley Soup

1/4 c olive oil
1 1/2 c diced carrots
1 1/2 c diced celery
1 large onion chopped
2 cloves garlic - finely minced
12 c beef stock
2 lbs top serlion or stew meat - cubed
1 lb sliced mushrooms
1/2 lb barley - soaked overnight
1 tsp. black pepper - freshly ground
1 tsp. dried oregano, thyme, basil

Recipe Directions for Beef and Barley Soup

Brown beef in 1/2 the oil. Remove beef to a bowl, add remaining oil to pot and saute garlic, carrots, celery and onions until soft. Add broth, mushrooms, barley and beef and bring to a boil. Lower to simmer , add spices, and cook covered on low flame for 3 hours. Stir the pot once every 30 minutes. Add additional broth or water to thin if the soup gets too salty or thick.
