Good beef soup with barley and veggies.

Recipe Ingredients for Beef Barley Soup

12 cups water
6 beef bouillon cubes
28 oz. canned tomatoes
10 oz. tomato soup
2 cups shredded carrots
2 cups shredded potato
1 cup chopped onion
1 cup chopped celery
1/2 cup barley
1 tbsp. parsley flakes
1/2 tsp. sugar
1 tsp salt
1/4 tsp. pepper
1 1/2 lb. Beef, Ground, 95% Lean Meat / 5% Fat, Crumbles

Recipe Directions for Beef Barley Soup

  1. Heat 6 cups water and bouillon cubes in large pot. Stir to dissolve.

  2. Add remaining ingredients except beef. Bring to a boil. Cover and simmer slowly for 1 1/2 hours.

  3. Add beef and simmer 1/2 hour more.

  4. Can use extra-lean ground beef or chopped roast beef or a combination of both.

  5. If using ground beef scramble 1 1/2 lb. meat with 2 cloves of garlic and add to soup half way through cooking.

  6. Makes about 22 cups.
