Recipe Ingredients for Beef Barley Soup

280 g beef, top sirloin
1 cup onion, diced
1/4 cup carrot, diced
1 cup celery, diced
1 tbsp garlic, finely minced
1/4 cup mushrooms, sliced
796 ml canned diced tomatoes
1/2 cup peas
1/2 cup green beans
1/2 cup pearl barley
1/2 cup potato, diced
2 tbsp red wine
1 4/5 l beef broth, reduced sodium

Recipe Directions for Beef Barley Soup

  1. Chop beef into bite sized chunks or strips. Sautee beef in a pan to carmelize the exterior.

  2. Chop vegetables, sautee ontion, carrot, celery and garlic for 5 minutes.

  3. Add tomatoes, mushrooms, potato, broth and red wine to a pot and bring to a boil.

  4. Reduce heat to low, add barley.

  5. Simmer for about 45 minutes, until barley is cooked and tender. You may need to add 1 to 2 cups of water as it boils off.

  6. Add peas and beans within the last 10 minutes of cooking.
