This recipe has all the ingredients included except barley, which for some reason couldn't be found by the recipe analyzer. Currently, it is 144 calories per bowl, but if you check the calorie count of cooked barley and add 1/3 cup to each serving, you only add another 20 calories to each bowl, plus the barley is very filling. Cook this soup in the biggest pot you own because it tends to take on a life of it's own as it increases in size.

Recipe Ingredients for Beef, barley & lentil soup

1 cup lentils, soaked overnight
1 lb. beef, cut very fine, but not minced
1 onion, chopped
2 carrots, peeled and sliced
2 stalks celery, sliced
1 cup mixed vegetables, frozen
2 tomatoes, chopped
1 salt and pepper to taste
1 teaspoon herbs, italian

Recipe Directions for Beef, barley & lentil soup

  1. Note that my instructions call for 1 cup of pearl barley, soaked overnight. Do NOT soak lentils or barley in salted water or they will never soften when they are cooked.

  2. Brown the beef lightly.

  3. Add onions and singe fry until softened.

  4. Add remaining ingredients and stir gently.

  5. Add approximately 3 litres of water. Sometimes, you'll need more water, sometimes less. Use your judgement beause you'll need water for the lentils and barley to cook properly with enough left over to actually make soup. I can never figure out any sort of rhyme or reason to the actual quantity of water.

  6. Bring to a rolling boil, then redude heat and simmer until the lentils and barley are cooked. (Approximately 45 minutes.)

  7. If you use a pressure cooker, cook for 8 minutes, then allow to cool naturally or cool under running cold water.
