Recipe Ingredients for Beef and Barley Casserole

0.5 g Non Stick Cooking Spray 100% Extra Virgin Olive Oil
800 grams Beef
1 large Onions
1 cup, diced Celery
1 carrot (7-1/2") Carrots
1 tbsp Tomato Paste
2 clove Garlic
1 full glass (6.0 fl oz) Wine, Table, Red
1 Cube Stock Cubes
1 tsp Peppercorns
400 grams Tomatoes Diced
1 tablespoon Thyme
2 leaves Bay Leaves
75 grams Pearl Barley
2 Tablespoon Cider Vinegar

Recipe Directions for Beef and Barley Casserole

  1. Spray large casserole. Brown beef in batches, remove to plate.

  2. Add onion, celery, carrot and a splash of water, fry for 3-4 mins till softened

  3. Add tomato past and garlic fry for another minute.

  4. Return beef to casserole, pour in wine, add stock cube, peppercorns and 500mls of boiling water, chopped tomatoes and bay leaves.

  5. Bring to boil cover and simmer for 1.5 hours.

  6. Add pearl barley and simmer for 30 minutes.
