If fresh asparagus is unavaible, asparagus, both white and green , in jars iis a good substitite, or failing that canned asparagus.

Recipe Ingredients for Beef and Asparagus Bagels

4 asparagus spears
1 cup watercress
1 tablespoon low-fat mayonnaise
1 teaspoon dijon mustard
2 bagels
4 oz cooked beef
1 salt and pepper

Recipe Directions for Beef and Asparagus Bagels

  1. 1. Put a pan of salted water on to a boil, Boil the fresh asparagus breifly, for 30 seconds or so, then drain well and set aside. (Asparagus in jars does not need cooking).

  2. 2. Remove the larger stalks from the watercress and chip it. Place the mayonnaise and mustard, if using, in a downl and stir in the watercress.

  3. 3. Preheat the boiler. Split the bagels in half and toast under the broiler. Spread the halves with th flavoured ,ayonnaise. Top with the beef and asparagus spears and wrap securely. The remaining bagels can be refrigerated for 1-2 days.
