Recipe Ingredients for Becky's Hearty Chicken and Vegetable Soup

4 tbs olive oil
1 onion
1/4 cup shallots
4 celery stalks
5 carrots
5 zucchini
4 tomatoes small
1 1/2 cups corn
1 lb chicken breasts
1 tbs butter
32 oz vegetable broth

Recipe Directions for Becky's Hearty Chicken and Vegetable Soup

  1. Cook chopped onions, shallots, celery and carrots in olive oil until onions are translucent.

  2. Cook chicken in 1 tbs butter until cooked through. Dice chicken.

  3. Drop tomatoes into boiling water for just a few minutes. Remove them from water and peel tomatoes. Puree them in a blender.

  4. Add 32 oz vegetable broth, pureed tomatoes, zucchini, chicken and corn to stock pot.

  5. Simmer until vegetables are just cooked (do not over cook).

  6. Add salt, pepper and seasoning to taste.
