Recipe Ingredients for Becky's Country Tuscan Chicken

3/4 lbs boneless, skinless chicken breast
1 tblsp flour
1 1/2 tblsp parsley, fresh, chopped
1 tblsp olive oil
1 leek, large, trimmed, white only
1 clove garlic, minced
1/2 cup low sodium chicken broth
2 plum tomatoes, seeded, chopped
1 red pepper
1/2 zucchini, medium, cut lenghtwise and sliced
1/2 tsp thyme, dried
8 oz navy beans, drained and rinsed
1/4 cup kalamata olives
1/6 cup parmesan cheese, shredded

Recipe Directions for Becky's Country Tuscan Chicken

  1. Toss chicken with flour and 1/2 tblsp parsley.

  2. Cook olive oil in dutch oven over medium high heat for 30 seconds

  3. In 3 batches, brown chicken 6 minutes, turning once, remove and drain

  4. Add leeks and garlic to pot, cook 2 minutes.

  5. Add broth, increase heat to high, bring to boil.

  6. Return chicken to pan.Cover and let simmer 30 minutes.

  7. Stir in beans and olives.

  8. Cook 5 minutes or till heated thru.

  9. Serve with cheese and remaining parsley.
