Recipe Ingredients for Becky's Basic Quick Vegetable Soup

1 tbs butter
2 tbs olive or canola oil
2 garlic cloves, minced (substitute 1 tsp minced garlic from a jar)
1/2 onion, chopped
2 medium zucchini, chopped
2 large carrots, chopped
1/2 cup celery, chopped
2 cups broccoli, chopped
1 potato, baked and chopped
4 cups chicken, vegetable or beef stock
1/4 cup Parmesan cheese

Recipe Directions for Becky's Basic Quick Vegetable Soup

  1. Heat oil and butter in large pot.

  2. Add onion and garlic and sauté on a medium heat for a few minutes.

  3. Add all of the remaining vegetables except the broccoli and sauté over medium heat until vegetables start to cook. Bring it to a boil.

  4. Lower heat, add the broccoli and simmer for another 20 minutes.

  5. Taste first, then add salt as needed.

  6. Options:

  7. Add a pinch of parmesan cheese, crumbled feta or any cheese that crumbled or grated right before serving.

  8. Add some diced chicken for a meatier meal.
