Makes 9 servings



Serving size = 2 T Creamy milk sauce made in a cheat with skim milk. Served with mild-flavored starches and vegetables.

Recipe Ingredients for Bechamel Sauce

1 1/2 T butter
1 1/2 T flour
1 c skim milk

Recipe Directions for Bechamel Sauce

  1. Heat butter in a medium saucepan, over medium-low heat, until foam subsides.

  2. Turn heat to low. Slowly whisk in flour, and continue to whisk for about 3 minutes, until the sauce darkens.

  3. Stir in the milk until the sauce is a little bit thinner than you would like it to be. You should use between 3/4 c and 1 1/2 c.

  4. Continue to cook until the liquid has achieved your desired thickness. Serve immediately or keep warm over gently simmering water.
