Using my leftovers. This uses the bottom part of the Napa Cabbage from a soup I made last weekend, a partial can of diced tomatoes, and the last of the snow peas. Rick says it is delicious. To the spices I also added: 1/2 tsp marjoram crushed, Mrs. Dash, Non-salt Non-msg seasoning. I usually also add crushed tomatoes sauteed in olive oil and simmered for 15 minutes, water, celary, more lentils and swiss chard.

Recipe Ingredients for Bea's Tomato vegetable soup and lentils

14 1/2 oz Tomatoes, Red, Ripe, Canned, Stewed
42 oz fat-free Lower Sodium Chicken Broth
1 chopped onion
1 cup of chopped snow peas
1/4 cup canned diced tomatoes
1 cup Napa cabbage
3 green onions
1/2 cup lentils
1 chopped carrot
1/3 cup baby baby bella mushrooms
2 dried chili peppers
1 tsp dried oregano
2 tsp olive oil
1/4 tsp oregano
1/8 tsp turmeric
1/8 tsp salt

Recipe Directions for Bea's Tomato vegetable soup and lentils

  1. Rinse lentils and set aside.

  2. Saute the onions, white stem pieces of the cabbage, carrot, snow peas, sliced mushroom in olive oil.

  3. Add other vegetables and spice. Saute for a couple of minutes. Then add broth.

  4. Bring to a low boil. Add lentils. Simmer on low or medium low for 20 - 30 minutes.
