good way to get rid of some summer garden veggies

Recipe Ingredients for Beans and squash

2 squash
1 1/2 cups broccoli, chopped
2 cups black beans
4 ounces swiss cheese
2 tbsp butter
2 tbsp flour
1 1/2 cups skim milk
1/2 tsp salt
1 tsp pepper
1/8 tsp cayenne
1/8 cup nutritional yeast

Recipe Directions for Beans and squash

  1. Chop veggies, layer in pan with beans.

  2. make a sauce out of the ingredients (except the 1st three) (if you don't know how to make a cheese sauce look it up).

  3. Top veggies with sauce and bake @ 400 degrees until it's done.

  4. (if you want it vegan swap out milk and butter for vegan versions and add more nooch instead of cheese).
