Recipe Ingredients for Beans & Rice

1 tbsp Olive Oil
1 cup rice, raw
1 onion
15 oz pinto beans
15 oz black beans
15 oz tomatoes, diced
1/2 tsp salt
1 tsp Italian seasoning
8 1/2 oz water

Recipe Directions for Beans & Rice

Place 1 T oil in crock. Add rice, stir to adequately coat with oil. Add beans. Drain tomatoes, reserving liquid in measuring cup. Add tomatoes and onion to crock. Add spices. Fill measuring cup containing reserved tomato juice to the 2 cup mark with water (as much as is necessary). Set crock for 2 to 4 hours on high, or 4 to 6 hours on low.
