African inspired beans and rice dish. This is for the beans that are mixed with a quantity of rice to suit the tastes. The beans offer a deliciously salty contrast to simple plain rice.

Recipe Ingredients for Beans and Rice

410 g can of butter beans
1 c vegetable stock
50 ml white wine
1 large onion
20 g Rice Bran Oil
250 g bacon
2 tsp cumin
1 tsp paprika
2 g bay leaves

Recipe Directions for Beans and Rice

  1. Dice onion and bacon and fry in oil till onions are clear

  2. Grid spices and add to pan for a minute or two till you can smell the aroma

  3. Add wine, bay leaf and canned beans, cannellini beans also work well

  4. Add stock such that there is a small amount of liquid to simmer the beans

  5. As the stock thickens add more stock till the beans start to soften

  6. This should use approximately all the stock
