Seasoned black beans on a bed of rice, topped with cheese and Greek yogurt.

Recipe Ingredients for Beans and Rice

1 cup Black Beans
1 cup Rice, White, Short-grain, Cooked
1 serving Fancy Shredded Fiesta Blend Cheese
1/4 cup Oikos Organic Greek Yogurt
0.13 tsp Garlic Salt

Recipe Directions for Beans and Rice

  1. Prepare the rice according to the manufacturer's directions. (I use white rice, but you can use brown, wild, or whatever you prefer)

  2. *Do not drain the beans* While the rice is cooking heat the beans in a small saucepan on low. I usually add a dash of salt, pepper, and a healthy dash of garlic salt (sorry I don't measure, lol), but you can also add chile powder and/or cayenne pepper. I change it up depending on my mood, just be careful with the cayenne because it gets spicy fast!

  3. The beans should be heated through by the time the rice finishes. Put 1 cup rice in a bowl, layer 1/2 cup beans on top, then sprinkle with cheese and add a spoonful of the Greek yogurt (it's an excellent replacement for sour cream).

  4. One extra note, this is excellent on a tortilla as well. Just reduce the amount of rice depending on how big your tortillas are.
