Recipe Ingredients for Beans and Rice, Jamaican/Camille Style

2 cups pinto beans , pre-soaked for 24 hours in warm water and 2 tablespoons cultured buttermilk, whey, or other acidic medium
2 tablespoons butter
20 g garlic , chopped
1 teaspoon dried thyme
1 teaspoon turmeric , ground
2 teaspoons salt
1 cup green chile
2 cups potato , chopped
2 cups basmati rice , soaked at least 7 hours

Recipe Directions for Beans and Rice, Jamaican/Camille Style

  1. Cover beans with warm water. Stir in buttermilk or whey and leave overnight in a warm place. In the morning, drain and rinse the beans and place in a pot. Add enough water to cover the beans, bring to a boil and skim. Cover and simmer for about 3 hours.

  2. Saute garlic gently in butter until soft. Add thyme, turmeric, salt, green chile, and potato. Simmer and stir until well mixed. Add to cooking beans. Add more water if necessary. Cover and simmer for about 5 hours or until beans are tender. Rinse and drain the rice and add to the pot with enough water to cover the rice and beans about inch. Bring to a boil and cook, uncovered, until liquid has reduced to the level of rice and beans. Cover and cook on lowest heat for about 30 minutes.
