Recipe Ingredients for Beans Pottage

8 oz black eyed peas
90 g (g g) (g g) On The Vine Tomatoes
1/2 red bell pepper
1/2 onion
30 gram chicken bouillon cubes
1 lb Goat
3 tablespoon palm oil

Recipe Directions for Beans Pottage

  1. Boil Black eyed peas till tender, drain (add 1 tbs sugar - optional)

  2. Boil goat, season with curry powder, thyme and bay leaves, set aside

  3. In a non stick pot, heat palm oil

  4. Chop onion, bell pepper and tomato, add to oil and fry for a few minutes

  5. Add goat meat and some of the stock stir, then add beans and stir well

  6. Add cray fish dust (optional)

  7. Let cook for another ten minutes, mash beans a little to give it a mushy consistency (optional)

  8. (Optional items: cook with yam, spinach, smoked fish, etc)

  9. Serve hot alone or with white rice
