White beans & greens with tomatoes for color -- vegetarian & easy to change up depending on what is in season.

Recipe Ingredients for Beans Greens & Tomatoes

1 lb kale
1 medium onion, diced
12 ounce great northern beans
5 cloves garlic
1/2 cup white wine
12 ounce diced tomatoes
1 tbsp olive oil
1 tsp unsalted butter

Recipe Directions for Beans Greens & Tomatoes

  1. Boil kale for ~8-12 mins.

  2. Meanwhile, saute garlic & onion in olive oil & butter.

  3. Add white wine & reduce.

  4. Add beans & spices (red pepper flakes, Red Hot other spices) & simmer.

  5. Add tomatoes.

  6. Add kale & simmer together until combined & soft.
