A quick and tasty dish of white beans and kale.

Recipe Ingredients for Beans and Greens

15.5 oz Great Northern Beans
1 small Onions
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
2 clove Garlic
1.5 1tsp Vegetable Oil, Canola
2 medium Mushrooms
0.5 cup Chicken Stock
1 tbsp Vinegar, Cider

Recipe Directions for Beans and Greens

  1. Heat oil in pan and add chopped onions and saute about five minutes over medium high heat. Reduce heat to medium and add diced tomatoes, mushrooms and garlic. Continue to saute about two more minutes, being careful not to let the garlic burn.

  2. Rinse kale and remove big stems and rough chop leaves. Add to the pan of onions, etc.

  3. Pour in chicken stock and vinegar.

  4. Put lid on and simmer til kale is tender.

  5. Serve hot.
