Recipe Ingredients for Beans and Greens

16 ounces Beans Cannellini
2 heads of escarole
3 tablespoons olive oil
1/2 cup Parmesan
4 cloves garlic
1 teaspoon salt

Recipe Directions for Beans and Greens

  1. You can use canned beans but homemade beans (in the pressure cooker) with garlic and bay leaves are terrific.

  2. While beans are cooking, wash and saute the escarole greens in olive oil, adding chopped garlic to the greens after they have cooked for a few minutes.

  3. Serve with Parmesan and salt and pepper.
