Recipe Ingredients for Beans & Greens

1 cup adzuki beans, dry
14 oz tomatoes, peeled and diced
1 cup hot salsa
1 tbsp canola oil
1 cup onion, diced
1 tbsp garlic, minced
1 tsp cumin
1 tsp oregano
2 tsp garlic salt
2 tsp chili powder
4 cups collard greens , chopped

Recipe Directions for Beans & Greens

  1. Cook beans in pressure cooker and let cool. Blanch collards, drain and set aside.

  2. Heat oil in large deep saucepan. When hot, add cumin seeds.

  3. When cumin seeds pop, add garlic and onions. Saute until onions are transparent, about 2-3 minutes.

  4. Add tomatoes and spices. Turn heat to medium and cook tomatoes, mashing into a paste.

  5. Add salsa and beans. Stir to mix. Add collards. Turn heat to low, cover, and simmer for 10 minutes.

  6. Stir gently to incorporate collards.

  7. Garnish with cheese or sour cream.
