This is a very healthy quick salad

Recipe Ingredients for Beans & Cucumber Salad

1 cup cooked red kidney beans
2 cucumber, peeled & chopped
2 large eggs, boiled + chopped in 4s or 6s
1/4 cup cilantro
1/4 cup lemon juice
1/2 cup cooked corn
3/4 tsp salt
1/2 tsp salt

Recipe Directions for Beans & Cucumber Salad

  1. Toss all incredients except lemon juice & salt+pepper.

  2. Add lemon juice & salt+pepper and toss again.

  3. Refrigerate for half hr atleast before serving.
