Vegetarian Mexican bean wraps - yum!

Recipe Ingredients for Bean Wraps

400 grams Beans, Kidney, Red, Mature Seeds, Canned
150 grams Crushed Tomatoes
0.5 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
0.5 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 medium (2-1/2" dia) Onions
1 clove Garlic
20 grams Tomato Puree
4 tortillas Old El Paso Flour Tortillas for Soft Tacos
0.5 cup, shredded Mozzarella, Whole Milk Cheese

Recipe Directions for Bean Wraps

  1. Preheat oven to 200 celsius.

  2. Gently fry chopped onion and crushed garlic.

  3. After 10 mins, add drained kidney beans, crushed tomatoes with their juice and tomato puree.

  4. Cook for 10-15 minutes til beans are soft.

  5. Meanwhile fry peppers in a little bit of olive oil.

  6. When bean mix is reduced, put half in a blender and whizz til a paste.

  7. Spread about a quarter of bean paste over each tortilla, then add a few spoonfuls of the un-blended bean mix and some bits of pepper.

  8. Sprinkle with cheese, wrap up, and place on tray in oven.

  9. Bake for 20 mins.
