Toasted corn tortilla with pinto beans, low fat cheese, and salsa, with a cabbage and tomato salad.

Recipe Ingredients for Bean Tostada

2 corn tortillas
1 c cooked or canned pinto beans (rinsed)
4 tbsp reduced fat cheddar, shredded
1/2 c salsa
2 c shredded cabbage
1 chopped tomato
4 tbsp ranch dressing, reduced fat

Recipe Directions for Bean Tostada

Bake 1 corn tortilla in 400-degree oven until crisp. Spread with c cooked or canned pinto beans (rinsed) and 2 Tbsp shredded reduced-fat Mexican blend cheese. Return to oven for 5 to 10 minutes until cheese melts. Top with c salsa. Serve with a cabbage salad (1 c shredded cabbage and 1 chopped tomato with 2 Tbsp reduced-fat dressing).
