Recipe Ingredients for Bean & Tortilla Casserole

2 teaspoons olive oil
1 large onion, chopped
1 green bell pepper
1/2 cup shredded carrot
2 garlic cloves, chopped
4 teaspoons chili powder
1 1/2 teaspoons dried oregano
28 oz crushed tomatoes
4 oz kidney beans
1 cup vegetable broth
1 teaspoon sugar
2 cups shredded cheese
1 cup sour cream
12 corn tortillas, cut in quarters

Recipe Directions for Bean & Tortilla Casserole

Preheat oven to 375 degrees. Sautee the onion, green pepper and carrot in the oil about 5 minutes. Add the garlic, chili powder and oregano and cook 1 min stiring. Stir in the tomatoes, beans, broth, and sugar and bring to a boil. Reduce heat and simmer on medium low uncovered for about 15 minutes. Meanwhile mix the sour cream and cheese. spoon 1/2 of the tomato-bean mixture into a shallow 2-quart dish. Layer with half the quartered tortillas and about one third of the cheese and sour sream mixture. Layer with the remaining tortillas, thenthe remaining sauce. and finally with the rest of the cheese mixture. Bake uncovered 20 minutes.
