Recipe Ingredients for Bean stew w. sauerkraut

3 1/2 c white beans
4 strips bacon
1 onion, large, chopped
1 pepper, chopped
4 medium carrots, chopped
1 l broth, chicken
1 l water
1 1/2 c sauerkraut

Recipe Directions for Bean stew w. sauerkraut

  1. Chop bacon and sautee in an enameled heavy pot until translucent but not browned

  2. Add chopped onions, peppers, carrots and sautee for 5 minutes

  3. Add canned sauerkraut (you can soak it in the water for an hour if you want to get rid of the excess sodium and sour flavor)

  4. Saute for 5 more minutes, and then add chicken broth, beans (beans need to be soaking in the water for at least 2 - 24 hours prior to cooking) and water

  5. Simmer on a medium heat for 40-50 minutes, or until the beans and other vegetables are soft
