Recipe Ingredients for Bean and Squash Soup

1 cup Beans, Navy, Mature Seeds
1 cup, cubes Squash, Winter, All Varieties
1 tbsp chopped Onions
1 medium apple Apples
1 tsp Ginger Root
1 cup Soup, stock, chicken, home-prepared

Recipe Directions for Bean and Squash Soup

Soak beans overnight, and cook until tender. Bake squash until soft. Saute onions with coriander. Add 2 Granny Smith apples and cooked squash. Grate fresh ginger to taste. Add saute mixture to cooked beans, and warm through. Puree with immersion blender or regular blender. Add hot chicken stock until desired consistency. Season with salt and pepper to taste.
