Bean and Squash Quesadillas Recipe

Inspired by a vegan "squashadilla" recipe, this particular quesadilla is filling enough to serve as a meal. I made mine with home-made refried black beans and homemade whole-wheat tortillas, but you can substitute pre-packaged ingredients for a quick & easy weeknight meal.

Recipe Ingredients for Bean and Squash Quesadillas

1 yellow squash, sliced
1/2 onion, chopped
1 clove garlic, minced
1 tsp oil
16 ounce refried beans
1 cup shredded cheese
4 whole-wheat tortillas

Recipe Directions for Bean and Squash Quesadillas

  1. Heat just enough oil in a skillet to sautee your ingredients. Add onions, garlic, and squash. Season with salt and pepper if desired.

  2. Sautee the onion and squash until onions are translucent and squash is softened. Set aside.

  3. Pre-heat a dry griddle until you can feel the heat radiate off of it if you hold your hand about six inches above it.

  4. Spread refried beans on a tortilla. Spoon over squash and onion mixture, then sprinkle with shredded cheese. Fold the tortilla in half. Press down with a spatula.

  5. Cook the quesadilla on each side until slightly golden and the cheese is melted.

  6. Serve with salsa, sour cream, or guacamole.
