A little healthier than traditional bean soup - uses smoked turkey instead of ham hocks. Otherwise, just like traditional soup.

Recipe Ingredients for Bean Soup w/Smoked Turkey

16 ounce bag dried northern white beans, rinsed and sorted
50 ounces smoked turkey drumsticks (2 drumsticks)
8 cups water
20 ounce can diced tomatoes
1 medium onion, chopped
1 cup celery, diced
4 carrots, scraped and sliced into rounds
1/2 teaspoon salt, to taste
1/2 teaspoon ground black pepper, to taste
1/4 teaspoon Tabasco sauce, to taste
1 cups water, if needed for consistency

Recipe Directions for Bean Soup w/Smoked Turkey

  1. Rinse and sort dry beans. Place in dutch oven or soup pot with 8 cups water and smoked turkey drumsticks. Bring to boil, cooking approximately 5-10 minutes. Remove from heat and cover for several hours. This can be placed in refrigerator after cooling, and allowed to continue soaking overnight.

  2. Remove drumsticks to a plate, and bring beans and stock back to a boil. Reduce heat to medium low simmer, and continue cooking. Trim meat from drumsticks, carely extracting all small bones and skin. Add to soup pot along with chopped vegetables and spices. Cook for approximately 45-60 minutes, adding water if needed once beans have softened. Makes twelve 1-cup servings.
