Makes 18 servings



Hearty vegetarian soup made with mixed dried beans; simmered overnight in crock pot. Add in items are simple, but you can add whatever you have on hand or the things you like in your soup. This soup is seasoned with oregano, fresh ground pepper and a few other spices. No salt was added other than what was in the ingredients added. I question a Nutrition Grade of B, as the beans are graded A- and all other ingredients are graded A. So why a B?

Recipe Ingredients for Bean Soup

8 cups water
2 pound, mixed beans, dried (Hannaford)
103 grams, baby carrots, raw, shredded/diced
100 grams, red onion, raw, diced
2 grams, peppers, hot chile, sun-dried
750 grams
411 grams
4 cloves, Garlic, Diced

Recipe Directions for Bean Soup

  1. Soak beans according to package instructions. Prepare other ingredients, as needed.

  2. Add all ingredients to crock pot and simmer (slow and longer is better).

  3. Stir and taste periodically, adding seasonings to taste.
