Use Bob's Red Mill 13-bean soup mix

Recipe Ingredients for Bean Soup

7 servings 13-bean soup mix
28 ounce canned tomatoes
15 ounce canned tomatoes
1 cup onion, chopped
1 cup carrot, chopped
1 tsp paprika
1/4 tsp cayenne pepper
8 cups water
8 ounces ham

Recipe Directions for Bean Soup

  1. Rinse and soak beans overnight

  2. Rinse beans and set aside

  3. Saute onion and carrots in 1 tbsp olive oil; add seasonings and saute until fragrant

  4. Add beans, tomatoes and water

  5. Simmmer 1 hour then add ham; simmer another 2 to 3 hours
