Recipe Ingredients for Bean Soup

1/16 cup dried cannellini beans
1/8 cup dried split peas
1/16 cup dried red kidney beans
1 medium carrot
1 cup parsnip
1 cup chopped celery
2 vegetable bouillon cubes

Recipe Directions for Bean Soup

  1. prepare vegetable broth the day ahead

  2. soak 1/4 cup dry bean soup mix over night in lots of water

  3. drain beans and add to veggie stock

  4. cook about 1 to 1 1/2 hour until beans are tender
