8 garlic cloves
1 medium yellow onion
4 cups kale
4 cups low-fat, low-sodium vegetable broth
1 1/2 cups cannellini beans
4 roma tomatoes
2 teaspoons dried Italian herb seasoning
1 teaspoon salt
1 teaspoon pepper

Recipe Directions for Bean Soup with Kale

Saute minced garlic and chopped onion in olive oil. Add chopped kale and heat until wilted. Add broth, beans, chopped tomatoes, and seasoning. Simmer for 20 minutes.
