would be great over greens for a "taco salad". The amount of beans is "dry" weight; before cooking. If using cooked beans, use 2 cups of each variety.

Recipe Ingredients for Bean salad, southwestern and fat free

1/2 cup pinto beans
1/2 cup kidney beans
1/2 cup black beans
1 cup tomatoes
1/2 cup rice vinegar
1/2 cup picante sauce
1/2 cup celery
1/2 cup onion
1 tsp cumin
3 tbsp cilantro
1 jalapeno pepper

Recipe Directions for Bean salad, southwestern and fat free

  1. chop veggies, combine everything, and chill.

  2. Note that I used "dry bean" equivalents, but you could use 1 can each of the red beans and two cans of black beans for the same results....or mix it up however you want.

  3. can add tomatos, cilanto, whaterver
