This high-protein bean salad filling will keep for several days in the refrigerator. Also good over greens in a salad.

Recipe Ingredients for Bean Salad Sandwich Filling

2 c cooked kidney beans
1 small bell pepper, diced
1/2 c walnuts, chopped
1 tomato, diced
1/4 c parsley, minced
3 tbsp olive oil
2 tsp Dijon mustard
2 tbsp lemon juice
1 clove garlic, crushed

Recipe Directions for Bean Salad Sandwich Filling

Place salad ingredients in bowl. Whisk dressing ingredients together. Pour dressing over bean mixture and toss gently to combine. If you have time, let salad marinate at least 30 minutes or overnight. Stuff into warmed pita pockets with lettuce.
