filling quick and easy salad, great as a side for grilled fish, or as a main with some steamed prawns

Recipe Ingredients for bean salad

1/2 cups chickpeas
1 tomato, diced
1/2 small cucumber, diced
1/2 cup garbanzo beans
1/2 cup lemon juice
1 tbsp olive oil
1/2 tbsp balsamic vinegar

Recipe Directions for bean salad

  1. dice the cucumber

  2. dice the tomato

  3. drain and rinse the chickpeas and garbanzo beans

  4. add all these to a bowl

  5. mix together the olive oil, lemon juice and balsamic vinegar

  6. pour the dressing over the salad and mix well

  7. add fresh ground balck pepper to taste
