More flavourful if kept overnight in the fridge after adding the dressing. Garnish with cilantro before serving.

Recipe Ingredients for Bean Salad

2 cups black eyed peas
2 cups kidney beans
2 cups chickpeas
1 green bell pepper, chopped
1 red bell pepper, chopped
1 cup frozen corn kernels
1/2 cup olive oil
1/2 cup red wine vinegar
3 tablespoon lemon juice
1 tablespoons brown sugar
1 tablespoon salt
1 clove garlic, crushed
1/4 cup chopped fresh cilantro
1/2 tablespoon ground cumin
1/2 tablespoon ground black pepper
1/2 teaspoon chili powder

Recipe Directions for Bean Salad

  1. Soak beans overnight. Discard water and boil until cooked but firm.

  2. Mix beans, bell peppers and corn kernel in a bowl.

  3. In a tightly closing container add olive oil, red wine vinegar, lemon juice, brown sugar, salt, garlic, cumin, pepper and chili powder. Shake well, until mixed.

  4. Add to beans and stir.

  5. Garnish with cilantro.
