Easy to whip up as a side with a couple cans of beans & some standard condiments. Chia seeds add fiber & protein as well as absorb any extra liquid.

Recipe Ingredients for Bean Salad

2 tbsp grapeseed oil
15 oz chickpeas
15 oz no salt added red kidney beans
1/2 oz chia seeds
2 tbsp lime juice
2 tbsp Worcestershire sauce
2 tbsp grated Parmesan cheese
1 tsp cumin
1 tsp black pepper
1 tbsp dried parsley

Recipe Directions for Bean Salad

  1. Rinse and drain beans.

  2. Combine all ingredients in a mixing bowl.

  3. Refrigerate until ready to serve.
