Makes 4 servings



Use 1 cup kidney beans and 1 cup black beans (measured after cooking). I had to change the amount to get correct calories. Makes about 4 or 5 one-cup servings.

Recipe Ingredients for Bean Salad

1/3 cup kidney beans, cooked
1/3 cup black beans, cooked
1 tomato, chopped
2 tbsp olive oil
2 tbsp vinegar
1 cup cucumber, diced
1 cup corn
1 oz artichoke hearts, marinated
1/2 tsp salt

Recipe Directions for Bean Salad

Mix everything together in a bowl! Couldn't be simpler.
