Recipe Ingredients for Bean salad

2 cups Black Beans
2 cups Red Kidney Beans
2 cups Pink Beans
2 cups White Beans
1/2 cup chopped Green bell pepper
1/2 cup chopped Red bell pepper
1/2 cup chopped Red Onion
2 tbsp. Extra Virgin Olive Oil (or to taste)
3 tbsp. Balsamic Vinegar (or to taste)
1 tsp. Salt (or to taste)
1 tsp. Black Pepper (or to taste)

Recipe Directions for Bean salad

  1. Strain beans well. Chop onion and peppers.

  2. Combine EVOO, Balsamic Vinegar, salt & black pepper. Mix well.

  3. Combine all ingredients in a bowl. (I add a packet of Goya-Salad and Vegetable Seasoning to give it a kick)

  4. Refrigerate until cool.

  5. Enjoy!!!
